Let Them Eat Funfetti Cake!

Even though we advocate healthy eating habits and recipes to match, sometimes we have to let go and grub hard on our birthday! Yes, today is one of our writers/co-founder of College Grubbin’s birthday and although she says she doesn’t love sweets the funfetti cake we made went real quick! Don’t feel bad about indulging sometimes, especially since we all work hard in balancing all aspects of our life such as: school, work, social, family, etc. Baking a cake, cookies, brownies or sweets for fun is fine, especially since when you make it, it tends to have less calories and questionable ingredients than the grocery store goodies you may pick up. Also, everyone faces financial restrictions in college so maybe you can’t splurge on a birthday present for your friend. Instead, bake a cake, or cupcakes! This will cost you less than $5 and you can personalize it anyway you’d like!

Serving size: 12 people

Prep time: 10 minutes

Bake time: 35-40 minutes (depending on your baking pan, refer to the box)


Pillsbury Funfetti vanilla cake mix

1 cup of water

1/3 cup of vegetable oil

3 eggs

Funfetti chocolate frosting


1. Preheat the oven to 350 degrees. Get out a medium sized mixing bowl and throw in 3 eggs, water and oil. Then gradually add the cake mix to the bowl.

2. Use a whisk or large spoon to blend all of the ingredients together and stop once the mixture doesn’t have any chunks and is consistent.

3. Grab a baking dish that has some depth and coat with Pam cooking spray or oil. Pour the mixture into the pan and set into the oven.

4. Refer to the box for the cooking time and test the cake with a fork or toothpick to see if it’s ready to take out. If there isn’t any residue left on the fork then it’s time to take that cake out!

5. Wait about 15 minutes before frosting it or taking it out of the baking dish. What’s nice about the Funfetti frosting is that it comes with sprinkles! Add your finishing touches and you are all done!

Does anybody remember doing this in high school for friends, or was it just me? I will never forget how this plan backfired on me when I baked a small chocolate cake for a “friend” of mine and iced it with pink frosting and sprinkles. When I gave it to her she set it down next to a bunch of other baked goods she got and said thank you but didn’t even touch it. I was little upset, especially when I overheard her later saying that she threw it out because she didn’t think I did a good job. Some people will love this as a gift and others may not. Usually everyone gets really excited about homemade sweets, and if they don’t want it, then keep it for yourself! What Can’t Nutella Do?

I know we have been holding out on you with the desserts but today is your lucky day! We literally made a mouth watering dessert that is not only amazingly easy (yes monkeys could do this) but its also a healthy dessert.

Nutella Covered Strawberries

Prep time: 5 minutes

Refrigerate time: 45 minutes


Fresh Strawberries

1 Jar of Nutella


1. Scoop about 1 cup of Nutella out and place in a microwavable safe dish. Then microwave for about 1 minute or until melted but not burned.

2. Then one by one dip the strawberries into the melted chocolate and swirl the strawberry around while holding from the stem so the entire strawberry is covered in chocolate.

3. Place chocolate covered strawberry on wax paper. This works best if the wax paper is on a cookie or baking sheet to provide support when transporting to the refrigerator.

4. After all your strawberries are covered then place cookie sheet in the refrigerator for about 45 minutes or chocolate is sufficiently hard.

Then enjoy this miraculously satisfying dessert!
